Coconut cream pie…
1 can Coconut Milk + enough Half and Half to make 3 cups total
1 Package of creamed coconut (or 1 cup shredded coconut)
1/3 cup Corn Starch
1/2 cup Sugar
Combine all ingredients in sauce pan. Cook over medium heat, stirring constantly, until it boils and thickens. Pour into pre-baked pie shell, and cool for at least four hours. Cover with plastic wrap directly on filling to prevent skin forming.
Top with fresh whipped cream and serve :o)
